Simple Yummy Cookies to Lift Up Your Mood on a Rainy Day

One of the best ways to cheer yourself up on a bad day is to treat yourself with some delicious snacks and warm tea. We know that snacks taste the best when they’re homemade. Therefore we are here to recommend you three excellent recipes to try at home, which require not too much time and ingredients to prepare.

Our first option is Banana Oat Chocolate Chip Cookies. These cute yummy snacks might be good both for you and your little kids. Also, the ingredients are so average, that you might already have them in your kitchen.

Ingredients:

  • Mashed ripe bananas (3)
  • Vanilla extract (1 teaspoon)
  • Coconut oil (1\4 cup)
  • Rolled oats (2 cups)
  • Almond meal (2\3 cup)
  • Shredded unsweetened coconut (1\3 cup)
  • Cinnamon (1\2 teaspoon)
  • Grain sea salt (1\2 teaspoon)
  • Baking powder (1 teaspoon)
  • Chocolate chips (6-7 ounces)

Measure all the ingredients and start your fun process of making cookies!

Step 1: Preheat oven to 350 degrees.

Step 2: Mix bananas, vanilla extract, and coconut oil in a bowl.

Step 3: Take another bowl and combine the oats, almond meal, shredded coconut, cinnamon, salt, and baking powder.

Step 4: Combine the mixture of the first bowl with the ingredients from the second one. Stir well. Add the chocolate chips.

Step 5: Put the dollops of the dough (don’t worry if it’s too loose) onto the baking sheet covered with a parchment paper. Each dollop has 2 teaspoons of the dough.

Step 6: Bake for approximately 18 minutes.

This is it! Easy and inspiring! The end result might make about 3 dozen of the cookies.

The Apple Pie Cookies are our second recommendation, as much as they’re easy to make, too, plus their smell kind of reminds us of the days of our childhood spent in the cozy houses of our grandparents. Also, they bring this festive atmosphere no matter what season of the year it is.

Here are the ingredients:

  • Apples, peeled, cored, and 1\4 inch diced (4 cups, or 2-3 apples)
  • Brown sugar (1\3 cup)
  • Apple pie spice (1 teaspoon)
  • Butter (2 tablespoons)
  • Corn starch (1 tablespoon)
  • Pie crust (1 box, or 2 crusts)
  • Egg wash (1 egg beaten with a splash of cream)

Before starting to make cookies, preheat your oven to 375 degrees.

Step 1: Combine the melted butter, diced apples, apple pie spice, cinnamon, and cornstarch and cook it in a skillet for 3-5 minutes till the apples begin to soften and the sauce thickens. Pull off the heat when the apples are tender and let cool.

Step 2: Unroll the pie crusts. Tip: roll out one of them a bit larger in diameter (this will be the top one), so you could seal the dough without stretching it too much.

Step 3: Put the apple filling on the smaller crust using a tablespoon. Make sure to leave enough space between the mounds of filling to seal.

Step 4: Cover the dough around the filling and out to the edges with an egg wash using a pastry brush.

Step 5: Cut around each of the mounds.

Step 6: Place the apple pie cookies on a lined baking sheet covered with parchment paper. Press and seal the edges of the cookies with a fork.

Step 7: Cover the tops of the cookies with an egg wash. Cut little slits to let the steam escape.

Step 8: Bake for about 15-18 minutes.

Our last recipe surely will bring as much joy as the previous ones, and it’s called Old-Fashioned Soft Pumpkin Cookies. A perfect snack with a glass of milk!

The ingredients:

  • All-purpose flour (2 1\2 cups)
  • Baking soda (1 teaspoon)
  • Baking powder (1 teaspoon)
  • Ground cinnamon (1 teaspoon)
  • Ground nutmeg (1\2 teaspoon)
  • Salt (1\2 teaspoon)
  • Granulated sugar (1 1\2 cups)
  • Softened (1 stick) butter (1\2 cup)
  • LIBBY’S® 100% Pure Pumpkin (1 cup)
  • 1 egg
  • Vanilla extract, divided (2 teaspoons)
  • Powdered sugar, sifted (2 cups)
  • Milk (3 tablespoons)
  • Butter, softened (1 tablespoon)

As usual, you gotta preheat your oven. In this case to 350 degrees.

Step 1: Combine flour, baking powder, nutmeg, baking soda, cinnamon, and salt in a medium bowl.

Step 2: Beat sugar with butter (1 stick) in another bowl. Blend well.

Step 3: Add pumpkin, egg and 1 teaspoon of vanilla to the sugar mixture. Beat until smooth.

Step 4: Start adding the flour mixture gradually.

Step 5: Place the dollops of dough with a rounded tablespoon on a baking sheet with parchment.

Step 6: Bake for 15-18 minutes. Let cool.

Step 7: Mix the sifted powdered sugar, 1 tablespoon butter, remaining vanilla (1 teaspoon), and milk and cover the cookies with the mixture.
